This luscious trifle is big on citrus, but with a tropical twist. Feel free to mix and match fruit—our lemon loaf cakes soak up all the flavors.

1 Parfait


1 Otis Spunkmeyer® Iced Lemon Mini Loaf Cake

fresh pineapple ring, left whole or chopped

Orange and yellow sprinkles

tablespoons whipping cream

1/8 teaspoon grated lemon or orange rind, optional

  1. Cut the Loaf Cakes in half, then cut into small ¼-inch cubes.
  2. Combine the whipping cream and the lemon or orange zest; whisk until the cream forms medium peaks for citrus whipped cream, or leave plain if you'd prefer.
  3. Layer the lemon loaf cubes in a bowl or glass and top with half of the whipped cream.  Place a pineapple ring or chopped pineapple on the cream, and finish with more whipped cream and sprinkles.
