Preparation
Cut the Loaf Cakes in half, then cut into small ¼-inch cubes.
Combine the whipping cream and the lemon or orange zest; whisk until the cream forms medium peaks for citrus whipped cream, or leave plain if you'd prefer.
Layer the lemon loaf cubes in a bowl or glass and top with half of the whipped cream. Place a pineapple ring or chopped pineapple on the cream, and finish with more whipped cream and sprinkles.
