It's National Peanut Butter Cookie Day!

There's no better way to celebrate National Peanut Butter Cookie Day than with a new, easy, and delicious cookie recipe. These delectable Peanut Butter Cookies are perfectly rich, nutty, and incredibly easy to make! Only three ingredients are essential in creating this addictive treat, but we got a little fancy and added in a vanilla bean.

Makes about a dozen cookies.

Ingredients:
1 cup Peanut Butter (we used a creamy, all-natural kind)
1 cup Granulated Sugar
1 large Egg
½ Vanilla Bean, split and scraped (can be substituted with 1 tsp vanilla bean extract or paste)

Directions:
Preheat your oven to 325°F.
Line a baking sheet with parchment or non-stick silicon baking mat.
In a large bowl, add in all ingredients and stir until well combined.
Roll into 1½-inch balls and place 2 inches apart on baking sheet.
For the classic Peanut Butter Cookie “look”, flatten in a crisscross pattern with tines of fork.
Bake until golden brown—it took us about 15 minutes in our oven.
Let cookies cool on sheet for a minute before moving to a cooling rack.

Tip: Don’t throw your used vanilla beans away! They are great for making vanilla sugar and infusing into creams for dessert. Make sure to use a clean knife and surface when processing to avoid cross-contamination or spoilage.
